- The crust must be relatively thin.
- The bottom of the pizza must touch the floor of the oven; it must under no circumstances be baked on a tray.
- The sauce cannot be too sweet.
- The cheese must be shredded mozzerella, and it must be spread about properly over a thin layer of sauce.
- When you take the pizza in your hand, it must be foldable.
- When you fold the pizza, it must stick straight out; it cannot flop like a bunny's ears.
- When the cheese layer separates from the dough, as is its wont, there must not be a puddle of sauce visible. You should only see the ripply, cooked, tan top of the pizza dough.

The best pizza in WNY
Listen. I grew up in the NYC metropolitan area. I am very particular about what constitutes "good pizza."
